Wow! I love this new method learnt today.

Most people only know about the popular ogbono soup but don't even know that there are different types and ways one can prepare ogbono.

I've also learnt preparing ogbono with melon (egusi) it's very delicious, if you haven't tried that before, I'll really advice you to try, there's no two ways in preparing it. How do you prepare your ogbono soup?

As for me, I love preparing the ogbono separate then the egusi separately, before adding both together. Then add my seasonings, crayfish and every other ingredients needed in preparing ogbono and egusi soup. Most importantly, don't forget your pumpkin leave and stockfish.

Enjoy ????

There are different ways of making ogbono soup. I usually use the frying method. It's basically easy and doesn't require it staying in the fire for too long.

Ingredients: grinded ogbono, palm oil, Maggi, salt, ground pepper, crayfish, ponmo, dryfish, stockfish, oziza  or ugu leaves, meat stock, periwinkles, booked water.
Note: if you feel you want to add other ingredients, you can. I always believe that being spontaneous in the kitchen and being open to different and new things are actually good.
So, now, to the cooking.

First, you preheat your pot and when it's hot enough, add your palm oil. Leave it to fry for just few minutes and when that's done,add your ground ogbono and stir. Now,this part is tricky. When stiring your ogbono, decrease the heat on your  gas cooker, this is so as not to get a burnt offering. Lol. After reducing the fire, add your dry ingredients. The Maggi, salt, crayfish, ground pepper. Mix all together and when you're satisfied with your mixing, add your meat stock and then the boiled water.At this point, you can increase the heat. Now, some people like their ogbono to be thick and draw a lot while some prefer it to be lighter and still draw. Whichever one you prefer, the water you put actually determines how it'll come out.
When the liquid (meat stock and water) has been added, add you ponmo and stockfish to boil properly together with the ogbono since they actually take time to get soft. Remember, DO NOT COVER YOUR POT. This is to avoid and overflow of you soup. Also,stir occasionally. After some minutes, add your periwinkles and then your oziza or ugu leaves and your meat. This is done later in the cooking because they don't take time to cook. If added earlier, the meat can get too soft and the leaves and periwinkles will get overcooked. You don't want that to happen, do you?
Leave for few minutes to simmer, then put it off the fire. Your ogbono soup is ready to be served. You can eat it with eba,semo, starch, poundo or pounded yam but not rice, hehehe.

Do enjoy!

Very lovely meal. The first time I was served by my sister who returned from school. I was like, what's this black soup ooo not until I had to taste it. It was so delicious and the spice taste made the aroma more enticing. Ever since then, I would rather sign in for the pepper soup when we needed to vote for what kind to be prepared in the house.

Great one..  I enjoy this soup any day any time.

There's another method I usually use and it's called the frying method of preparation.  The proceduresre as follows
Put your pot on fire and pour a little  palm oil on it
Pour the quantity of Ogbono you want to prepare on it and stir..
You have to keep stirring for about 2mins after which you will pour boiling water into it and then add up all your spices and oh yes!  Your soup is ready

@Garey:

Do you know I am just getting to know that you can add pepper soup spice to ogbono soup? Where have I been all these while oo. I have been missing out on some very delicious delicacies, I know. I personally have a thing for pepper soup spice, so I can already imagine how the aroma of the ogbono would be if added to it.

Thanks for this update, dear writer. Every day is a day to learn, relearn and unlearn.

@KennyM:

Thanks for this. This is the method I grew up to see my mom use and I tell you, it is a great one because I grew up really liking ogbono soup. It was one soup we never got tired of. It's a simple soup to make but a great soup to taste. Thanks once again.

Waow! Yummy!
I naturally love soups that are slippery, popularly called `draw soup. Okro was my best soup until I got served ogbono, after much persuasion I participated of it, well, the first few mousels took great faith and encouragement because of its smell after that hmmmm I learnt to prepare it because I had fallen in love with the soup and its unique aroma.
My own method of preparing ogbono.
I will stick with ingredient already listed here
First step: a pot on fire, there goes my palm oil, pepper, and so on for the soup aside blended ogbono and ugwu leaves.
Second step: add water to your blended ogbono inside a bowl, stir till your desired thickness.
Third step, pour already stirred ogbono into the cooking pot, leave to steam and buzzzzzz! Ogbono soup is ready to be served with starch or desired swallow.
Am a proud ogbono eater now, intact I have taught my sister and encouraged her to eat too.

Another quick method one can apply in cooking Ogbono - a soup delicacy that is unique and mostly cooked by the south south people.

While boiling, your Stock fish must have been soaked in hot water prior to the cooking. Other fish like smoked fish( all kinds of smoked fish you want to use to deal with the soup) plus Egun-fish should be properly washed with hot water and salt and seive-off the water.

Then start by boiling the beef, fresh fish, Ponmo( thick white one, for those that enjoy eating the crunching one) with  plenty locust-bean (Iru).   Let it boil for 15/20 minutes to ensure softening of the beef and thick white ponmo.

While boiling the aforementioned above, already ensure your Ogbono is grinded with plenty crayfish and dry pepper (Note: for those that like cameroon pepper, use it in small quantity so that everyone including ulcer patient can eat your sweet soup). Pour inside a plate, add palm oil and put it on top of the boiling stock.

Once you see the mix (ogbono+crayfish+pepper) has softened like a paste then, pour it inside the boiling stock. Add your seasonings and allow to boil for 2 minute.

Vegetable to add this time around is dry bitter leaf ( i.e a well washed bitterleaf that is dried/wet).  Allow to boil for five minutes more. OMG! serve Semo or Eba or Pounded-yam. The taste is unique.

Try it and let me know.
