I have to understand that a local jollof rice with palmoil called Akwu in Igbo, is very delicious than rice prepared with tomatoes and peppers.

Recipe: rice, akwu, salt, onions , fresh pepper crayfish, dryfish, smoke fish, anyone of your choice, scent leaf.
Method:
Boil water, add the palm carnel, allow to boil for sometime, when it is soft, carry it down.
Pound the palm fruit in a mortar.
Wash the palm fruit, separate the water from the palm kernel.
Pour the water into your cooking pot, add your season, the dry fish, smoke fish, pounded Cray fish, pepper and onions. Allow to boil for some minutes.

Please note, your rice has to be per boiled and washed.
Add the rice, to the pot, allow to boil, then, add the scent leaf, allow to boil for some minutes.

Taste, to check whether there is enough salt and Maggi.
Allow the water to dry up, then bring the pot down.

We all know that rice is an energy giving food (carbohydrate). One of the most common foods in Nigeria especially. Rice is specially prepared for special occasions like wedding ceremonies, birthday celebrations, etc. Rice can be prepared in different ways. It can be prepared with beans, fried rice, jollof rice, tuwo cinkafa, white rice and stew, rice with moin moin, bean cake, plantain,Irish, coconut rice etc.

You enjoy the taste of rice when it is well seasoned. I will be writing on how to prepare local jollof rice with palm oil. 
The ingredients required for family CONSUMPTION are :
Palm oil
Maggi(to taste) 
Salt (to taste) 
Curry
Cray fish (optional),
 Dry fish / ice fish,
 Locust beans (optional), 
Fresh or tin tomatoe,
 Pepper.
Onions 

Preparations :
1. First parboil your rice for 10 minutes and leave it to drain in a sieve.
 2. You can  grind the crayfish and set it aside.Add chopped onions, ground cray, all seasonings, pepper, tomatoes, Locust fish. 
 3. Put the parboiled rice in the fried oil where the ingredients are (not too fried).
 4. Then add water into the pot, make sure the water in the pot is in thesame level with the rice if not add some more to top it up. 
 5. Add the dried fish. 
 6. Cover and leave the rice to cook until the water in the pot is dried up then you stir randomly. 
   Then the local rice is ready to eat.It can be eaten with plantain as breakfast, lunch or dinner. 
Hmmmm.yummy!have a nice time eating with your family in the dining room.

Making rice with palm oil is really easy. It's almksg the same as using Vegetable oil. Yes, there are differences in ingredients, but the processes almost are the same.

For your palm oil rice, using fish is highly welcomed. And you also make sure you really fry your palm oil before adding your onions. This makes it have a really nice aroma and even taste. You could also be creative with the kind of fishes you want to use (crayfish is also welcomed). It's also advisable to use yellow pepper. This has a nicer taste. Your rice has to be parboiled also. Serve with whatever you want to eat it with and enjoy the delicacy.

Local jollof rice with palm oil, firstly you get rice ready and other ingredients like, Maggi, thyme, curry, jollof rice leaf, butter, salt, tin tomatoes, onions, nutmeg, jollof rice spicies, and the palm oil etc. You put pot on fire and pour the palm oil to get more hotter, after that you fry the onions and the tin tomatoes. After been hot you now add a water that will enough to cook the rice. You wait for some minutes to make the water hot and you add necessary ingredients like salt, Maggie, curry, thyme and spicies and later add the rice so to firm together. Its necessary to stare together in other not to have ones that will not cook very well but if stared very well all the strain of the rice will be done together and later after that you add your butter and leave the food for about 5minutes so for the butter to mix with the jollof rice.

Ingredients
Rice , water , maggi, Sault, oil, pepper, onion.

Let the water boil then add all the necessary ingredients cover it and then watch over it until is cooked .
Serve and eat.

Recipes:
Meat(chicken)
Palm oil
Onions
Grinded pepper
Rice
Seasoning cubes
Salt
Tomato paste
Locust beans
Vegetable oil
Water

Step 1: Bleach the palm oil on fire for 5 minutes , add grinded pepper and tomato paste into the bleached palm oil.

Step 2 : Slice a big bulb of onion , after that add it into the mixture on fire.Add seasoning cubes ,salt and locust beans to taste.

Step 3: let it fry for 5-10 minutes . After that add water into it .

Step 4: Let it boil, after that add the washed rice into it .

Step 5: cover the pot and leave it to cook for 10-20minutes .

Step 6:Boil the meat(chicken) for 5 minutes after , put some oil on the frying pan , add the remaining pepper in the pan . After add some salt and seasoning cubes in it.

Step 7: add the chicken into the fried pepper and let it fry too.

Garnish with the pepper chicken!!!
