Interesting.

I like eating beans and corn too but I've never tried cooking my beans with sweet corn. I usually make use of the unprocessed corn directly from the cob. After separating your corn from the cobs (you can do as many as you want), you rinse it properly then leave it in a bowl.
Your beans is the first thing you put on the fire. Parboil it first to remove the chemicals and kill the weevils. To do this, I usually put my beans in a bowl and boil the water separately. After it's boiled, I pour the hot water immediately into the bowl of beans and leave it there. The beans eventually soaks the water and swells. Then I go ahead and wash it more than once (the water changes color),drain the water and then put it inside the pot of another water and place it on the fire.
Now, to the corn. You have to know the kind of corn you are using. Is it very strong or just light enough? This actually determines when you'll put the corn with the beans. If you feel it's really tough like the beans, put it immediately after the beans (this is what I usually do, corns can be unpredictable). If the corn is not too hard, put it when the beans have only cooked a little.
Cut your onions (add enough, onions add to the taste of beans) with the corn and beans and cook until the texture is to your satisfaction. I don't usually put palm oil first. I start with pepper, then your Maggi(some people don't use Maggi for beans, they are pros in using only salt,I use both). I add little salt instead. Then you add in your crayfish (for those who like using it to cook). It's preferable you use the grinded crayfish. You wouldn't want chunks of little fishes in your beans and if that's how you like it still, well, you should. Note as you add these ingredients, you stir so that it goes round. Then I put in my oil as the last thing. Stir until you're satisfied that the ingredients have all mixed together. Leave to steam for few minutes.
Your beans and corn is ready to be served and eaten.
Now you can enjoy...

Hmmmm!! Making me yearn for it right now. It's so delicious with its amazing nutrients in their different proportions. Especially when there are some other sea food to spice it up. Hmm! You can't resist. However, I have never tried it with sweet corn. I have only used the tender maize from its cobs that I take out myself. Perhaps you chose sweet corn because it's been processed already and the sweetened taste it would add to the meal. Most of us have done justice to its preparation steps so I would rather not venture into that. So much cuisine here in Africa for people in the diaspora to learn. God bless us all

Wow you remind me of those yesteryears and the memories thereof. I must confess to you that I miss the taste and enjoyment of the mixture of beans and corn pottage. This used to be one of my best special type of food in those days.

I remember how mama used to cook this and we serve and eat together as a family. I can remember that Mama used to cook this delicacy mostly during rainy season. Ones there is fresh grown corn and once it isits season to harvest.

This is the time we mostly cook this delicacy and I can remember that we serve and eat it hot just like you mentioned in your article. The best taste from this type of meal is when it is eaten hot. Some people prepare their own watery while some make theirs thick.

I used to salivate at the sight of this meal as the love for it was just crazy. I personally used to long for it and I can go and pack some more behind closed doors. How I hope those years comes back again and again as the delicacies of these days seems to be totally different a d we are beginning to be loosing  the former delicacies.

Thanks for refreshing the memories. This will make me to go and buy fresh corn and beans and I will try to cool this following your guidelines and lead. I hope that I would eventually have the taste and pleasure I used to have back then in those days.

Though I learnt that some people do not like this type of meal at all. This makes me to conclude that one man's food is another man's poison. Whichever way I'll advise as many as have not tasted this meal to try it and give us feed back.

I think corn pottage as you name it, is simply an English branding. Let make our local content or name more prominent so I would suggest called it the original name: Bean & Corn as "Adalu" in Yoruba language.

Whence you want to cook this meal, soak your beans & corn hours before cooking so as to minimize gas consumption. Then ensure all other things you want to you to spice it up are ready and do yourself well by eating it not too hot or cold.
